Bean Burritos

This is a family favorite. My Grandpa always makes these for us when we visit, and we grew up never knowing the secret ingredient. (I still am not sure I know) :)
I have tweaked a few things to suit us, but the taste is very similar.
1-1lb bag of dry pinto beans
Soak in crockpot/pot overnight. Cover with water 1-2inches above beans and leave at room temperature * **
In the morning drain and rinse beans, once again cover beans with water about 1inch above beans, and start cooking on low
About 20min prior to eating, cook up some sausage in a skillet.
We use about 1/2lb of turkey suasage, but I think my grandpa uses italian sausage
Once that is cooked, add about 1/2 to 3/4 of the beans. I just base this on how much room is in my skillet. :)
I either freeze the extra beans if I halve it, or the girls eat the beans whole with cheese on top.
Mash the beans and mix well with the sausage
Add 1/4-1/2 C. of salsa
Add water until moist
Serve with a hot tortilla - buttered
And get some good cheese and lots of it. (we love Tillamook, medium cheddar)
Enjoy!!
*you can add garlic, salt, pepper, and onion seasoning anytime during the process. I usually do garlic and salt while soaking and cooking
**you can also use canned pinto beans, drain, rinse, and make sure they are warm before you mash
Thanks Gramps!!!
